My mother always stressed that breakfast was the most important meal of the day. Since we lived in South and/or Central Texas, and were working class, we ate a lot of tacos of assorted kinds (cheap, nutritious, filling, and delicious). So that made our breakfast taco the most important taco of the day.
Our breakfast tacos were usually made from leftovers - mostly last night's vegetables (potatoes, beans, onions, peppers) combined with eggs, cheese, and salsa, with the whole yummy concoction wrapped in a large warm flour tortilla. Sometimes if we were lucky and Mom was feeling especially generous there would be a little bacon or sausage tossed in.
Today I ran across a picture of the ultimate breakfast taco. You can rest assured I'll be making this baby tomorrow morning - cholesterol levels be damned!
